Detailed Overview
Under the direction of the Food Service Supervisor I, prepares meals in/for bulk rethermalization system.
Responsibilities
- Pans and portions food items as per prescribed methods following established menus, quantities and schedules for bulk rethermalization system.
- Completes internal order request form for food and supplies for their area; receives and stores.
- Heats/reheats assigned food and therapeutic diet items such as soups, sauces, salads, starches, meats, fish, poultry, vegetables and desserts by bulk rethermalization. Tests item for palatability; takes and records temperatures for HACCP compliance and adjust accordingly.
- Portions food items per established quantities.
- Maintains established food rotations in storage to minimize spoilage and waste. Completes inventory sheets to ensure appropriate supplies are sent to the unit.
- Portions food for residents at meal times. Assists with table service at meal times.
- Prepares sandwiches/nourishment items for residents as per prescribed diet requirements.
- Cleans work areas, equipment and utensils to ensure proper sanitation levels are maintained. Assists with dish pick up and return to kitchen.
- Records temperatures as per HACCP regulations.
- Informs supervisor of problems for timely resolution.
- Performs other related duties as assigned.
Qualifications
Education and Experience
Grade 10 plus one year's recent related experience or an equivalent combination of education, training and experience. Food Safe Level 1 Certification.
