Description

This position involves preparing and serving meals for residents, including more complex meal preparation as needed. As a member of the dietary team, the cook will prioritize sound nutritional practices and adhere to professional dietetic standards. The cook is responsible for producing and serving high-quality, safe, and nutritious food. It is the dietary team's responsibility to ensure that the kitchen is clean, sanitized, and compliant with The Salvation Army's policies and legislation.

Reports to: Dietary and Environmental Service Coordinator.

KEY RESPONSIBILITIES:

Food Services

  • To assist the Dietary and Environmental Service Coordinator with menu planning and food preparations
  • Prepares special food for therapeutic, texture modification and specific dietary needs of the clients.
  • Reviews menus before preparing meals, prepares and serves them accordingly.
  • Ensures use of proper food handling techniques.
  • In consultation with Dietary and Environmental Service Coordinator makes menu substitutions as necessary and records these in designated place. Meets time schedule for service of meals and nourishments.
  • Manages mealtime activities in the absence of the Dietary and Environmental Service Coordinator Follows daily production charts, standardized recipes and daily composite menus, while working within a set budget.
  • Work within food preparations schedules to ensure meeting meal deadlines.
  • Completes all necessary documentation (food and refrigeration temperatures, dish machine temperatures if applicable, menu changes) as assigned.
  • Assists in converting recipes to different quantities and preparing/following daily production charts.
  • Monitors quality of food supplies received and report to Dietary and Environmental Service Coordinator any issues.
  • Reports food, supply, and equipment needs to the Dietary and Environmental Service Coordinator.
  • Assists in the First in First Out process of food and supply products.
  • Completes pre-start up equipment checks, as necessary.
  • Ensure the kitchen will comply with all Provincial/ York Region Public Health Standards and York Region licensing requirements.
  • Food Storage ensure all requirements are met before storing food such as labels, dates and storage containers.
  • Dispose of all unusable food.
  • Wash and sanitize dishes and cookware after each meal.
  • Sanitization of all surfaces and floors according to daily schedule for kitchen and dining area.
  • Removal of all garbage within the kitchen and dining areas.
  • Good understanding and practice of the facilities policies, procedures and guidelines. Reads distributed communications to stay
  • Follows and complies with health and safety legislation and departmental safe job procedures.
  • Participate in preparing special occasions and theme meal days.
  • Adhere to standards of The Salvation Army Food Services safety practices, meal.
  • planning and meal service as well as the Regional Municipality of York's Core Standards.

Administration

  • Attending any meeting that involve Dietary Services.
  • Food Inventory- tracking in and out of supplies.
  • Tracking Equipment startup and temperatures.
  • Work order completion for any issues within the kitchen and dining areas.

Volunteer Responsibilities

  • May from time to time supervise volunteers and/or summer students.

Perform other related duties as required.

WORKING CONDITIONS:

  • This is a permanent full-time position.
  • Shift work - 84 hours biweekly.
  • Onsite 95% of time.
  • Travel may be required for on-site training and/or meetings. (5%)

QUALIFICATIONS AND EDUCATION REQUIREMENTS:

  • Grade 12 or equivalent.
  • Culinary Training and/or College Diploma in Culinary.

EXPERIENCE AND KNOWLEDGE:

  • 1—3 years culinary experience in a client-based organization.
  • Preference to experience working with homelessness, mental health, and addictions.
  • Knowledge and understanding of barriers related to homelessness.
  • Knowledge of York Region community resources an asset.

SKILLS AND CAPABILITIES:

  • Oral and written communication skills, including interpersonal and time management, are essential.
  • Must exhibit strong empathy, understanding and support for all, including difficult-to-serve clients.
  • Ability to undergo applicable screening and background checks successfully that are satisfactory to The Salvation Army, in its sole discretion (i.e., The Salvation Army Abuse Registry) and provide an original copy of a Background Check with vulnerable sector screening.
  • Ability and willingness to develop an understanding and support for the mission and purpose of The Salvation Army in Canada and its implications as related to position responsibilities.
